Our Founder
Shannon Knox is the founder of Food 4ur Soul Intl Kitchen Inc, a mobile food pantry and soup kitchen. Growing up on a small farm in the heart of suburbia, I knew the beauty of nature, the healing of the mind and soul through fresh vegetables and fruit, and the safe space I could always find, along with our large extended family and the neighborhood kids and their families, all at my grandmother’s, Nana (Emma’s ) table. She preserved the grapes from our small orchard and the tomatoes from our small vegetable garden, in our cold cellar, we ate fresh eggs from the chickens and naturally fed pigs that she reared and which we enjoyed at special holiday festivities.
As a barber, cosmetologist, masseuse, I appreciate the care for the body, the benefits of self-care; yet, when my mother was diagnosed with cancer and suffered through her treatments, I learned more about the healing properties of massage as beneficial for cancer patients. After my mother died, I developed a condition called RSD, a nerve condition in my right arm, which left me incapacitated and I could no longer work. I lost my home, my car, I lost everything, I lost it all. The doctors expressed that I would never be able to use my right arm again. I became devastated from the downturn of events, the grief at the loss of my mom, and my disability but I remembered my early days growing up with my grandmother, Nana (Emma) and I found strength, a deep resolve to reinvent myself. I remembered her encouragement on the healing in natural foods, for the mind, and soul as well as the body. I enrolled in school to become a nutritionist, delved into alternative healing principles from ancient cultures and combined with the priceless home education, those life saving lessons I learned from my grandmother, I was able to heal myself. Now that I had acquired all this education, and victory in my own body and mind, putting my life back together, I wanted to help others, so I started by helping the elderly and those with long term illnesses by cooking for them. Volunteering at the local soup kitchen to feed people with food insecurity touched my heart and I always remembered that my grandmother would tell me to eat because I had to feed my body and my mind and her encouragement that I could become anything I wanted to become. I noticed that oftentimes the soup kitchen did not offer natural, healthy choices; and so, began the idea, taking root, of Food 4 UR Soul.
